For me, summer means an abundance of fresh cucumber and tomatoes right out of the garden. Sometimes it is hard to stop myself from eating them before I have a chance to prepare a tasty salad. This salad is easy to double or even triple, especially when the produce keeps coming. Enjoy!
Remember to choose organic whenever possible.
Refreshing Cucumber & Cherry Tomato Salad
Serves 1
Ingredients:
10 cherry tomatoes, halved or quartered
1 medium sized cucumber, chopped
a handful of fresh cilantro, minced
a handful of fresh parsley, minced
a handful of fresh chives or green onion, minced (optional)
fresh greens for the plate
For the dressing:
1 lemon, freshly squeezed
4 Tablespoons olive oil
4 Tablespoons Bragg’s liquid aminos or a wheat-free tamari
1 clove garlic, pressed
Procedure:
- wash vegetables, prepare as directed above and place in a bowl
- in a glass jar, combine the ingredients for the dressing
- toss the vegetables with 1/2 of the dressing; taste and add more dressing if necessary
- serve on a bed of fresh lettuce or spinach
Adventurous Variations:
-easy to increase the ingredients for a larger crowd…great for a pot luck!
-substitute the cilantro with fresh basil
