Glory Drops

When I was a teenager, I loved to bake muffins.  I even bought a book that was exclusively muffin recipes.  One of my favourite recipes was Morning Glory Muffins.

Today, I would like to share my raw vegan version of this muffin with you.  This is a tasty snack for any time and is easy to share with others.

Remember to use organic ingredients whenever possible.

GLORY DROPS

GloryDrops

Ingredients:
1 1/2 cups pecans
1 Tablespoon cinnamon
3/4 cup grated coconut
4 carrots, finely grated
1 apple, coarsely grated
1/2 cup fresh pineapple, minced
1 cup raisins, soaked about 2 hours
1 Tablespoon chia seeds
2/3 cup coconut oil, liquefied using hot water method *

*place coconut oil in a bowl and place this bowl in another bowl that is filled with hot water

Procedure:

  • Buzz the pecans in your food processor to a fine meal. Place in a large bowl.
  • To this add the cinnamon, coconut, carrots, apple, pineapple, raisins and chia seeds and stir until just mixed.
  • Add the coconut oil and stir to combine.
  • Using a spoon, scoop 2 Tablespoons and drop on a piece of parchment paper.
  • Place the Glory Drops in a flat container with a lid and store in the fridge.

This will keep up to 10 days in the fridge and several months in the freezer.
