Refreshing Cucumber & Cherry Tomato Salad Serves 1
  • 10 cherry tomatoes, halved or quartered
  • 1 medium sized cucumber, chopped
  • a handful of fresh cilantro, minced
  • a handful of fresh parsley, minced
  • a handful of fresh chives or green onion, minced (optional)
  • fresh greens for the plate
  • For the dressing:
  • 1 lemon, freshly squeezed
  • 4 Tablespoons olive oil
  • 4 Tablespoons Bragg's liquid aminos or a wheat-free tamari
  • 1 clove garlic, pressed
  1. Wash vegetables, prepare as directed above and place in a bowl
  2. In a glass jar, combine the ingredients for the dressing
  3. Toss the vegetables with ½ of the dressing; taste and add more dressing if necessary
  4. Serve on a bed of fresh lettuce or spinach
